Definition
Yeast refers to a group of unicellular fungi, of which the most common are the Saccharomyces, that are able to determine a fermentation process. Some species are commonly used for leavening bread and fermenting alcoholic beverages. The yeast is especially rich in amino acids, trace elements and vitamins of group B.
